Cilantro Lime Shrimp

I love seafood.  This recipe was definitely a HIT with the entire family!  Quick, easy and delicious.  It is good served hot or cold.  Go crazy.

Cilantro Lime Shrimp

1 tsp virgin unrefined coconut oil
2 tsp minced garlic
1 lb raw shrimp, peeled and deveined
Juice of 1 lime
2 tbsp. fresh cilantro, finely chopped
Sea salt and pepper to taste

Melt coconut oil in a medium skillet over medium high heat.  Add garlic and sautee for one minute, stirring frequently.  Add shrimp and cook for 2-3 minutes or until shrimp is pink and opaque.  Remove from heat and stir in lime juice, cilantro and sea salt and pepper.  Serve hot or cold.  I served it with avocado black bean salsa in a corn tortilla and it was AMAZING!!!
