Carnitas Tostadas: 21 Day Fix Approved!

This recipe is pretty simple and has been kid and husband approved!  Clean eating for the whole family! You can substitute or add whatever ingredients you like.  If you are doing the 21 Day Fix, just make sure you use your containers to measure out the different components.




1 Pork Tenderloin
21 Day Fix Southwest Seasoning Blend (or your favorite southwest seasoning blend, just make sure it is low in salt and does not contain sugar)
2 Corn Tortillas
1 Green Container Romaine Lettuce, chopped
1/2 Green Container Cherry Tomatoes (I used the yellow ones because I like them and they are pretty), chopped
1/2 Green Container Green Onions, chopped
1/2 blue container Cheddar cheese, shredded
1/2 blue container mashed avocado
Cilantro chopped (free food, add to taste)


Rub the pork tenderloin with the southwest seasoning blend and cook on low in the crock pot 10-12 hours.


 Shred and leave in the juice.

Heat oven to 425 degrees and bake tortillas about 5 minutes until golden brown and crispy

Put pork in 1 red container and put 1/2 of the container on top of each tortilla. Measure the other ingredients and distribute them evenly on both tortillas.

Tip of the day:  I like to use plastic cups to put the toppings in.  That way everyone can build their own tostada based on what they like.  It isn't the prettiest presentation, but it is VERY pretty when clean up time comes around!
