Baked Cod with Zucchini Noodles and Tomatoes, 21 Day Fix Approved

I made this for a quick, easy lunch, and it was awesome!  This made one portion, since it was lonely little me for lunch, but you could easily multiply it.

1 4 oz piece of cod
1/4 tsp garlic powder
salt and pepper to taste
1/2 tsp coconut oil
1 medium zucchini
6 grape tomatoes, cut in half
1 tsp olive oil
1 tsp garlic, minced
salt and pepper to taste

 
Preheat oven to 350 degrees.  Melt coconut oil in the bottom of a glass baking dish.  Sprinkle garlic powder, salt and pepper on both sides of the cod and place it in the baking dish.  Bake cod for about 5-10 minutes or until it is cooked through.

While the cod is cooking, use the kitchen gadget of your choice to make zucchini noodles (I like the Vegetti).  Heat the olive oil in a medium sautee pan.  Add garlic and sautee about 1 minute.  Add zucchini and tomatoes and season with salt and pepper.  Cook for about 5 minutes, less for more al dente noodles, longer for softer noodles.
