Cilantro Lime Salmon

I love salmon. Its quick, easy, and really good for you! My daughter is a pretty picky eater. She will usually only eat a few bites of salmon, but this recipe had her gobbling up her portion and asking for more!  Here's the recipe:



Cilantro Lime Salmon

1.5 to 2 pound filet of salmon
2 tablespoons olive oil or coconut oil (melted)
2 tablespoons fresh, choopped cilantro
1 clove minced garlic
Juice of 1 lime
Salt & pepper to taste (I like pink Himalayan sea salt)

Mix together oil, cilantro, garlic and lime. Pour on top of the salmon (OR you can put it all in a ziploc bag and marinate for about 30 minutes, if you have the time!) Season with salt and pepper. Bake in a 375 degree oven for about 15 minutes, depending on the thickness of your salmon.

That's it! See, easy peasy! I served it with cucumber avocado salad (recipe here) and  half a baked sweet potato that I scooped out of the skin, mashed up and sprinkled with cinnamon. Quick, easy, healthy, AND delicious. Really, what more can you want out of life?

Makes 6 servings
