Creamy Coffee with Coconut Oil
I made a life-changing discovery today. My universe is altered. The stars are aligned. All is right with the world. Let me give you a little background before I delve into my earth-shattering revelation. I love coffee. I love coffee almost as much as (sometimes more than) I love people. When I started 21 Day Fix back in August of 2014, I made the heart wrenching decision to stop putting creamer in my coffee and make the sacrifice to just drink it black. I grew to like it black, but it just was never that same feeling of getting a treat, it never felt quite as satisfying. Fast forward to this morning. I saw someone post on facebook about putting coconut oil in their coffee. I had started using coconut oil in my cooking, and I really like it, not only for the flavor it imparts, but also for the great health benefits (you can find more about that on the Shakeology blog). So, I decided, what the heck? Give it a try! You know what??? IT'S DELICIOUS!! Rich, creamy, nutty goodness. OK, I am salivating for another cup now. Here's how you make it.
I started with a K-Cup of plain coffee. You could use your favorite flavored coffee if you want. I brewed up a cup.
Then, I put my hot cup of coffee in the blender. Yep, the blender. Then, I added a teaspoon of virgin unrefined coconut oil. Put the blender top on nice and tight (remember, there is HOT liquid inside), and blend it for about 15 seconds. You will create creamy, frothy, nutty lusciousness. No joke. I will never even be TEMPTED to use creamer again. Praising God for coconut oil. What are you waiting for? Go make a cup NOW! Even if it's midnight. Don't wait.
